I'm not sure to have completely understood your question bu I will try an answer.
From London by Eurostar, you will stop at "Gare du Nord" station. Trains to Perpignan are used to start from "Gare de Lyon".
To reach "Gare de Lyon" from "Gare du Nord", you only need to take the "RER D" onwards Malheserbes or Melun. The journey will be only 10mn long.
